Myzithra Cheese

Aged myzithra (myzithra xeri) is a hard, salty cheese. I make angel hair or spaghetti noddles and then brown some butter. I pour the small amount of butter over the cooked noodles and then add myzithra cheese. It is tasty with thinly grated or thickly grated cheese. Experiment first before tasting!
